Beef Sirloin Tip Steak With Garlic Butter Potatoes
Beef sirloin tip steak bites with flavorful garlic butter potatoes is a quick and easy one pan dinner that makes for a great weeknight meal!

Section 1: Ingredients
1.5 lb Beef sirloin tip steak or top sirloin, cut into 1" cubes
1 lb Potatoes peeled and cut into 1" cubes
4 tablespoon Neutral oil such as Canola
4 tbsp Butter divided
4 Garlic cloves minced
1 tablespoon Garlic powder
1 tablespoon Onion powder
1 tablespoon Paprika
1 teaspoon Cumin
½ teaspoon Cayenne pepper
3 teaspoon Salt cut in half if you want less salt
1 teaspoon Black pepper
Section 2: Directions
1. Combine the garlic powder, onion powder, paprika, cumin, cayenne, black pepper and 2 teaspoons of the salt into a small bowl and stir to combine.
2. In a medium bowl add the steak tips, 2 tablespoon of the vegetable oil, and half of the spice mixture, and stir to combine. Set aside and allow to marinate for a minimum of 15 minutes, up to an hour.
3. While the beef is marinating, peel and cube the potatoes. Sprinkle with remaining 1 teaspoon of salt and set in a shallow bowl or deep plate like a pie plate, and spread them out a bit.
4. Microwave potatoes on high for 4 minutes. Gently stir, and microwave for another 2-4 minutes, until potatoes are just fork tender (known as par-cooked). Set aside.
5. Heat a deep skillet on medium high heat, and add just a bit of neutral cooking oil. Add steak tips and cook 2-3 minutes on each side, till seared but not cooked through. Remove from the pan and set aside on a plate.
6. Stir in the other half of the spice mix to the potatoes and toss to combine and coat. Heat remaining vegetable oil in pan on medium heat. Add potatoes, minced garlic and 2 tablespoon of the butter, and cook for about 10 minutes till easily pierced with a fork, stirring often.
7. Add steak to pan with potatoes, and remaining 2 tablespoon of butter, and cook till heated through, about 1-2 minutes. Serve immediately.
Thin Sliced Sirloin Tip Steak
This recipe is for thinly sliced sirloin tip steak. The actual cooking is minimal both in terms of time and complexity, but a tenderizing procedure and a flavorful marinade are essential.

Section 1: Ingredients
1 lb beef sirloin tip steak, thin sliced, blade tenderized*
3 tbsp soy sauce
1 tbsp brown sugar
5 tsp rice vinegar (or another mild vinegar)
3 tbsp vegetable oil**
2 cloves garlic, minced
3 green onions
salt and pepper, to taste for seasoning
toasted sesame seeds (optional), for garnish
Section 2: Directions
1. Dissolve the brown sugar in the rice vinegar. Thinly slice the whites and light green parts of the onions (reserve the greens to use as garnish). Add them to the vinegar and sugar, add the garlic, soy sauce, vegetable oil and mix everything.
2. In a non-reactive container or plastic bag thoroughly coat the sirloin tip steak with marinade. Place in the refrigerator and let marinate for 6 hrs or up to 24 hrs (with this beef cut longer is better).
3. When ready to cook, bring the steak to room temperature. Scrape off the marinade and discard, lightly season with salt and pepper.
4. Heat a grilling pan or cast iron skillet over medium-high for about 2-3 minutes. Add a bit of cooking oil and sear the thin sliced sirloin tip steaks for about 1-2 minutes per side, depending on how large their surface. Alternatively, heat your grill to medium-high and cook for 1-2 minutes on each side.
5. Rest the seared steaks loosely covered with foil to keep warm, about 4-5 minutes. Cut against the grain for a more tender bite of beef. Serve sprinkled with sesame seeds and the reserved green onion (sliced small and on the diagonal).
Notes:
*If the steak you bought was not already mechanically tenderized use a meat mallet to do so yourself. Breaking up the muscle fibers and connective tissue before you marinate helps with flavor absorption in addition to creating a more tender piece of beef.
**Add an optional 1 tsp sesame oil if you have it and like its nutty flavor.
Herb Crusted Sirloin Tip Steak
Herb-crusted, tender, and juicy, this versatile and budget friendly beef cut is flavorful, easy to prepare, and delicious to eat.

Section 1: Ingredients
2 Sirloin Tip Steaks 1 inch thick
Kosher salt
1 tablespoon olive oil
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh parsley
2 cloves fresh garlic minced
½ teaspoon black pepper
Section 2: Directions
1.Remove the steaks from the refrigerator about 1 hour before grilling. Liberally salt the steaks and allow the salt to penetrate and tenderize the meat as they come to room temperature.
2. After 1 hour, wipe the salt from each steak. Mix all remaining ingredients in a small bowl, then rub and press mixture into all surfaces of beef.
3. Preheat a grill to high heat, oiling the grates to prevent sticking.
4. Grill the steaks for 3-6 minutes per side, turning once, until cooked to medium rare. They may need more or less time depending on thickness.
5.Remove the steaks to a cutting board, tent with foil, and allow them to rest for 5-10 minutes. Slice the steak thinly across the grain and serve as desired.
Notes:
- Use our vinegar or mustard-based marinades for the most tender steak.
- Ensure your grill is very hot before grilling steaks to ensure a nice sear.
- Remove your steak from the grill when your meat thermometer reads 125 degrees F.
- Use tongs to flip your steaks. You never want to use a fork and puncture a steak while its cooking as you want to retain as much juice as possible.
