Beef Short Ribs (Flanken) Recipes

Oven-Barbecued Short Ribs


Melt-in-your-mouth flanken-cut beef short ribs are rubbed with a seasoning blend, then slow roasted in the oven with sauce to tender, saucy perfection.

Section 1: Ingredients


dry rub ingredients

  • 3 3/4 teaspoons mustard powder

  • 1 tablespoon brown sugar

  • 2 1/4 teaspoons smoked paprika

  • 2 1/4 teaspoons cumin

  • 1 1/2 teaspoons garlic powder

  • 1 1/2 teaspoons onion powder

  • 1 1/2 teaspoons dried thyme

  • 1 1/2 teaspoons crushed red pepper

  • 1 1/2 teaspoons celery salt

  • 1 1/2 teaspoons marjoram

  • 1 1/2 teaspoons dried oregano

  • 3/4 teaspoon black pepper

  • 3/4 teaspoon chili powder (mild)

  • 3/4 teaspoon dried sage

  • 3/4 teaspoon sour salt (or citric acid)

  • 3/4 teaspoon kosher salt

  • 1/2 teaspoon ground coriander

  • Heaping 1/4 teaspoon allspice


Ingredients

  • 4 pounds bone-in flanken rib strips cut 1 inch thick (8 rib strips - should have 4 bones to each piece)

  • 3/4 cup sweet barbecue sauce

  • 3/4 cup spicy barbecue sauce

  • 1 tablespoon dry rub mixture




Section 2: Directions


1. Preheat oven to 275 degrees F. In a small bowl, mix together all of the dry rub ingredients until well incorporated. Set aside 1 tbsp of rub for later.


2. Cover a sheet tray with aluminum foil or a generous amount of nonstick cooking spray and place the ribs, evenly spaced, on the tray. Coat one side of the ribs with half of the dry rub mixture, then turn and coat the other side. Place the ribs in the oven for 1 hour.


3. After one hour has passed, remove the ribs from the oven and use tongs to flip them over. Place back in the oven for 1 hour, or until nicely browned.

After the second hour has passed, remove the ribs from the oven and turn the oven temperature up to 450 degrees F.


4. While the oven heats up, mix the two barbecue sauces and 1 tbsp of dry mix in a mixing bowl until thoroughly combined.


5. Generously coat each side of the ribs with the barbecue sauce mixture using a basting brush.


6. Once the oven has reached 450 degrees F, place the ribs back into the oven for 2-3 minutes, just until they are crisp on the outside and meltingly tender on the inside. Watch closely to make sure they don't burn. Slice and serve!




Asian Flanken Beef Ribs


Asian Marinated Flanken Beef Ribs pan seared on the stove - this recipe is super easy and super yum! Here's how to make it!



Section 1: Ingredients


  • 1 lb flanken short ribs aka cross-cut short ribs

  • 1/4 cup Thick Soy Sauce (if you do not have this, you can sub it with 1/4 cup of soy sauce and 2 more tbsp of honey)

  • 1 tbsp cornstarch

  • 2 tbsp honey

  • 4 cloves of garlic, minced

  • 1 tsp sesame oil

  • 1 tbsp cooking oil




Section 2: Directions


1. In a large mixing bowl, add flanken short ribs and pour honey, thick soy sauce, sesame oil, cornstarch and minced garlic. Mix well and let it marinade for at least half an hour (the longer the better!).

2. Heat up a large cooking pan, and add cooking oil. Let it heat up for 1-2 minutes so that we know the cooking pan is hot.

3. Add the slices of short ribs on the cooking pan. Let it cook for about a minute, untouched. Then, using tongs or chopsticks, flip them over to cook the other side for another minute or until cooked thoroughly but still tender and not tough

4. Remove ribs from the pan, and then drizzle the remaining sauce and garlic in the pan all over the ribs and serve!


Notes

Thick Soy Sauce:

There’s actually many different types of soy sauce! Thick soy sauce is a lot thicker than your normal soy sauce. It has a richer, sweeter flavor, which is perfect for this dish. If you can’t find any thick soy sauce, you can actually use regular soy sauce. However, since Thick soy sauce is more sweet, you are now missing a flavor, so I would recommend adding a bit of sugar or sweetener of your choice.

Or another hack – Oyster sauce can often be used as a substitute because it is similar in texture and it is also salty and sweet at the same time.


Grill version:

You can also grill these delicious ribs, as the important part really was the sauce we put together and the marinating! All you have to do is set up your gas or charcoal grill over high heat, and once it's ready, place the ribs on the grate. Then grill for about 4-6 minutes on each side, and then remove and serve!


Air Fryer version:

You can also make these flanken ribs in the air fryer! After you marinate it, air fry at 400 degrees F for 3 min and then flip sides and air fry another 3 min.




Super Flavorful Flanken Short Ribs


Marinate and cut Flanken Style Short Ribs into tender, bite-sized pieces, and experience a burst of mouthwatering umami flavor. Serve flanken ribs for an easy weeknight dinner or as a delicious addition to your next barbecue.

Section 1: Ingredients


  • 6 Flanken short ribs

  • ¼ cup Soy sauce

  • ¼ cup Brown sugar

  • 1 tablespoon Olive oil

  • ½ tablespoon Garlic powder

  • 1 teaspoon Onion powder

  • 1 teaspoon Ground Ginger

  • 1 teaspoon Black pepper

  • 1 teaspoon Salt (optional to taste)




Section 2: Directions


1. Place the short ribs in a large Ziplock bag then add in all of the ingredients into the bag including the soy sauce, brown sugar, olive oil, garlic powder, onion powder, ground ginger, pepper, and salt. 

2. Remove as much air out of the bag as possible and zip it up well. Place the bag in the refrigerator at least one hour or overnight if possible.


COOK THE SHORT RIBS

1. Place a cast iron skillet on the stove and heat it up over medium high heat for at least one minute. Once the pan is piping hot, place the short ribs in the skillet and press them out flat.

2. Do not overcrowd the pan, you will have to cook them in batches. Seer each flanken steak on each side for about 3-5 minutes to get a nice char. 

3. Once both sides are cooked, remove it from the skillet and let it rest for at least 5 minutes. Continue cooking the remaining short ribs.

4. Once the riblets have cooled, you can enjoy them as-is, or cut them in pieces right by each bone. And enjoy! 


NOTES

- Cooking times may vary depending on how thick the ribs are.

- Always add meat to a hot skillet. This ensures quick, even cooking. More importantly, you get a beautiful char that intensifies the flavor.
