Crispy Pork Belly

Learn how to cook pork belly that's tender inside and crunchy on top! This crispy pork belly recipe is simple, flavorful, and so easy.

PREP: 5 minutes

COOK: 1 hour 50 minutes

RESTING TIME: 10 minutes

TOTAL: 1 hour 55 minutes

Section 1: Ingredients

  • 1 ½ lb Pork belly (with skin)

  • 1 ½ tbsp Avocado oil

  • ½ tbsp Sea salt

  • ½ tbsp Black pepper

Section 2: Directions

1. Preheat oven to 350 degrees F.

2. Using a knife, score the skin of the pork belly.

3. Use a silicone basting brush to brush the avocado oil over the top of the pork belly. Sprinkle with salt and pepper.

4. Place the pork belly into a baking dish, skin side up, and bake for 1 hour.

5. Increase oven to 425 degrees F and bake for an additional 35-45 minutes, until the top is golden brown.

6. Change oven to broil and broil the pork belly on high for 2-5 minutes, until the skin is crispy to your liking. It will crisp up more as it cools from hot to warm.

7. Allow the pork belly to rest for 10 minutes before cutting into 1-inch slices.

~Position the oven rack correctly. It should be in the middle while baking, but you can move it to 6 inches away from the broiler for the broiling step.

~Bake time will vary. This can depend on the thickness of your pork belly, the baking dish you use, and your oven. An hour for the first baking step is a good starting point regardless, but when you bake after increasing the oven temperature, watch for a golden brown skin.

~Watch closely when broiling. Pork belly can go from crispy to burnt very quickly, so check on it every minute or so.

~Slice against the grain. This makes each bite more tender.

Tips and tricks:

~Room temperature pork belly will always cook more evenly than chilled pork. To bring the pork belly down to room temperature, place the slices on the kitchen counter for 15 to 20 minutes before cooking.

~Use a meat thermometer to check that the pork belly is cooked to 200ºF. You can pull it from the smoker when the internal temp is between 165ºF to 170ºF, tent it with foil, and let the residual heat finish bringing it up to 200ºF.

~After smoking, let the pork rest for 10 to 15 minutes. This will help every bit of flavor absorb back into the meat.

Customize it:

Get creative and customize your smoked pork belly strips with different seasonings, dry rubs, and sauces.

Swap the dry spices in this recipe for a Cajun seasoning blend.

Make it extra smoky by swapping the spices for my chili seasoning.

Add a pinch of cayenne or chili flakes to the dry rub for extra heat.

To make pork belly burnt ends, coat the bites of pork in barbecue sauce or white BBQ sauce. Place them in a skillet over high heat to quickly sear the sauce, creating “burnt ends”.

Slow Cooker Pork Belly with Honey Balsamic Glaze

This pork belly in the slow cooker is incredibly tender and infused with a sticky tangy glaze. The slow-cooker really locks in the flavors, and the end result is a delicious, moist, and fall-apart tender pork belly. This slow cooker pork belly recipe will be a hit for Sunday lunch and dinner parties alike!

PREP TIME: 15 minutes

COOK TIME: 4 hours

SERVINGS: 4 serving

Section 1: Ingredients

  • 2 lbs (1kg) pork belly

  • Coarse salt and freshly ground black pepper, to taste

  • A pinch of Cayenne pepper, optional

For the Honey Balsamic Glaze:

  • 1/4 cup (60ml) balsamic vinegar

  • 1/4 cup (60ml) chicken stock

  • 4 tablespoons honey

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 tablespoon Italian seasoning (or dried oregano, basil, and thyme)

  • Coarse salt and freshly ground black pepper, to taste

Section 2: Directions

1. To make the slow cooker pork belly recipe: With a sharp knife, score the pork belly skin diagonally in a diamond pattern. Season with salt, pepper, and Cayenne pepper, rubbing it well into the skin.

2. Heat oil in a large skillet to medium heat. Add the pork belly, skin side down, and cook for 3 minutes until crisped and golden brown. Lightly oil the bottom and sides of your slow cooker and transfer the pork to the slow cooker.

3. In a small bowl, combine balsamic vinegar, chicken stock, honey, garlic, olive oil, Italian seasoning, and black pepper. Drizzle the mixture over the pork belly. Close the lid and cook on HIGH for 4 hours or on LOW for 7 hours.

4. When the pork belly is cooked, slice to your desired thickness. Serve the slow-cooked pork belly immediately with rice, noodles, or over sandwiches and tacos. Enjoy!

~ Put the pork belly in the slow cooker skin side up – so the fat under the skin will melt slowly and protect the meat from drying up.

~You may want to skim the fat rendered by the pork belly before serving.

~You can reserve a bit of the glaze and heat it for 4-5 minutes in a saucepan until thickened, and serve it on the side.

~Nothing is stopping you from crisping up the skin at the end, simply transfer the slow cooker pork belly to a baking dish and broil for a couple of minutes before serving.
